Monterey Chicken Salad
Here in Doylestown we have a local kitchen store called Carlow Cookery. They have cooking demonstrations regularly, and this recipe comes from their "Tea and Tarts" class. Made with standard ingredients the salad does have quite a bit of fat content. I choose to use nonfat options where applicable (mayo, dressing, cheese) to make it kinder on my heart. :)
Monterey Chicken
1 tomato, diced
1 bunch of scallions, sliced
1 avocado, diced
juice of one lemon
1/2 c. bleu cheese crumbs
1 c. of Monterey Jack cheese shredded (I use a cheddar jack mix)
2 c. cooked diced chicken
1/4 c. mayonaise
1/2 c. blue cheese dressing
salt to taste
1 small can chopped olives
Mix all ingredients together. I serve this on a bed of baby greens or in pita pockets.
